Ingredients:
Cake
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup brewed strong coffee (Intenso or Fuerte Blends work great), cooled
Tres Leches Mix
- 1 can (14 ounces) sweetened condensed milk
- 1 can (12 ounces) evaporated milk
- 1/2 cup brewed strong coffee, cooled
- For the Whipped Cream Topping:
Frosting
- 1 1/2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Cocoa powder or ground cinnamon for garnish (optional)
instructions:

Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease and flour a baking dish and set it aside.

Make the Coffee Cake:
In a mixing bowl, whisk together the flour, baking powder, and salt. In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in 1/4 cup of brewed coffee until the batter is smooth. Pour the batter into the prepared baking dish and spread it out evenly.

Bake the Cake:
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Prepare the Tres Leches Mixture:
While the cake is baking, whisk together the sweetened condensed milk, evaporated milk, and 1/2 cup of brewed coffee in a bowl until well combined.

Soak the Cake:
Once the cake is out of the oven and still warm, use a fork to poke holes all over the top. Pour the prepared Tres Leches mixture evenly over the warm cake. Allow the cake to cool to room temperature, and then refrigerate it for at least 2 hours or overnight to allow it to absorb the liquid.

In a mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
